Ingredients:
Elephant foot yam (suran) - 600 grams
Peanuts - ½ cup
Cumin seeds - 1 tsp
Hing - just a pinch
Lemon - half
Salt - to taste
Coriander leaves - a few
Method:
Steam the suran in a pressure cooker. Now, peel the skin off and mash the suran well. Take a few peanuts and dry roast them. Make a coarse peanut powder by grinding this together. Mix the yam, roast peanuts mixture, some green chillies and some salt. Take a thick-bottomed vessel. In it, add a few drops of oil, cumin or jeera seeds. Also add a pinch of hing and saute. When it is ready, add the yam mixture to it on the stovetop and blend it further for a few minutes on low heat for few minutes. Add lemon and garnish with coriander leaves. Serve the khichdi warm.
