Food Recipes: How to make the perfect bhatura



Yes! I know, It's sinful and deep fried and unhealthy, but chuck all that, I love chole bhature! So while having my so called favorite dish I sneaked peeked in the kitchen with the chef to see how the perfect bhautre were made. Here's the secret recipe!


Ingredients:

2 cups flour
3 tbsp sooji
4 tbsp yogurt
1 tbsp olive oil
1/2 tsp sugar
1 tsp baking powder
Salt to taste
Oil (any), for deep frying

Method:

Food Recipes -Combine all the ingredients together into a soft dough. The dough should not be too hard or too soft on touch.

-Cover the dough with a wet cloth and keep aside for at least 3 to 4 hrs. Till it sets.

-Pinch off some dough and make lemon sized balls, put a little oil so it doesn't stick and roll into thick round shaped rotis. Take care not to make the rotis too thick or too thin.

-Heat enough oil for deep frying in a heavy bottomed vessel. Once the oil is hot, reduce flame to medium high, slide the batura into the hot oil. Using the back of the ladle, press in the center and along the edges and you will find it will puff. Flip over and fry the other side till light golden brown. The bature should cook on the inside and puff up.
